A big welcoming hug of mezcal

If you have yet to familiarize yourself with tequila’s smoky cousin, mezcal, Bienvenidos from The Barking Dog is the perfect way to welcome it into your life.

If you already love mescal, you will also enjoy this cocktail as its simple and beautifully balanced constellation really gives credit to the qualities of the spirit.

Bienvenidos is fresh – yet dark and gloomy – just like the local neighborhood of Nørrebro which inspired the cocktail. The simple combination of kahlua, lime and mezcal might seem odd, but it has just the right amount of exotic acid and coffee roasted sweetness to make the toasted Mexican agave shine beyond comparison.

4 cl Del Maguey Vida mezcal
2 cl kahlua
2 cl fresh lime juice

Stir with ice and serve in a cocktail glass. Finish with a twist of lime that you use for Garnish.

Loving mezcal, Carl Wrangel originally made Bienvenidos for himself. He experimented with 10 different coffee liqurs and it turned out that only kahlua made it work!

Some times the most simple cocktails are the hardest to make, as small adjustments are crucial for balance. As mezcal is a single batch product, it will vary from bottle to bottle so you’ll have to carefully adjust the right balance for each cocktail. The same goes for the lime if you’re using fresh ones. One lime might be sweet another one sour. This is fine tuning that often only bartenders care about, but when knowing why it’s interesting to play around with.

Bienvenidos has been on the menu of The Barking Dog since the beginning. Hopefully it will stay, as it proves how far you can get with a few ingredients and a lot of attention to taste and detail.
