Straight from the mystery box

Before winning the Danish championship in classic cocktails 2016 Ted Dako competed in “World Class”. World Class is recognized as the most prestigious bartender competition in the world because of the extremely high demands that the competing bartenders face. You compete against the best bartenders from 54 different countries and if you win you will have made 48 different cocktails and have passed 15 different challenges that fiercely test your skills as a bartender.

In the World Class Nordic finals Ted was faced with the “mystery box” challenge in which you have ten minutes to pick your ingredients and make two cocktails. Ted came up with  “Business Thyme” that can now be found on the menu at Bar 25:

4 cl gin
1,5 cl akacia honey syrup
1,5 cl lemon juice
3 cl raspberry pure
2 cl thyme syrup (blend simple syrup with fresh thyme and double strain)

Shake all ingredients with ice. Serve over ice cubes in a rock glass. For garnish put in some crushed ice in a “mexican elbow” to make the ice bowl and fill it with dried raspberries and fresh thyme.

The forest herb compliments the tartness of the raspberries beautifully. What a wonderful creation Ted has brought us from the mystery box.
