Grøn & Hvid

Somewhere a little North of your comfort zone

You know those days when you feel like venturing a little north of your comfort zone… “Grøn & Hvid” is for one of those days. You’ll find it in the “Nordic Cocktails” section of the Lidkoeb menu. It might not be your first pick, but it should be. Have a go at it while your mind and taste buds are still open, receptive and untainted by your default orders. You’ll be surprised. But that’s what we want when we venture into yet untrodden territory, right? You might discover that this daring mix of dill and white chocolate is absolutely delightful.

3 cl dill aquavit
3 cl Creme de Cacao
2 cl white chocolate cream (melted white chocolate mixed with whole cream)

Shake with ice and serve in a cocktail glass. Dust with raw liquorice powder.

You won’t be sipping this all night, but it is amazing none the less and a wonderful way to use dill aquavit. Like vodka, aquavit is distilled from either grain, potatoes, or some other mash. After distillation it is flavored with herbs and spices from which it gets its distinctive flavour. The main spices defining aquavit are caraway and dill. In Scandinavia aquavit is often drunk during festive gatherings such as the Christmas and Easter holidays or in Finland and Sweden especially at their traditional crayfish parties. Aquavit however is still not well represented on the bar shelves of cocktail bars.

We really should challenge ourselves a bit more, when we have the chance. “Grøn og Hvid” provides such a chance when deciding for a friday night cocktail at Lidkoeb and we dare you take take it.

CoC's photographer and occasional writer. I enjoy cocktail photography almost as much as cocktail imbibery. I try to do the drinks justice by making them appear as appealing to the eye as they are to the mouth and nose. I have a weakness for gins and I'm fond of bitter stuff as well, but I'll enjoy a good rum, bourbon or whisky if I'm forced. :)
