A bitter sweet Christmas present
About a year ago, Frederick-Sebastian Krause started toying with the idea of making a new brand for “the spirit of the North”. He wanted to re-ignite the passion for tradition, culture and craft through a deliciously handcrafted small batch aquavit with a distinctively youthful brand. With ambitions of making the world’s best aquavits Frederick-Sebastian has now expanded his portfolio with “Vi.ER Jól”, a Christmas aquavit with wild juniper, spruce, cardamom and cloves foraged by the same people who forage the herbs, roots and spices for NOMA and Geranium. Combined with a slightly higher ABV this gives Vi.ER Jól a tad more bite and complexity than the Vi.ER Danmark aquavit.
For cocktail purposes Frederick-Sebastian suggests a “spiced up” negroni that he has named “Peter’s Christmas”:
3 cl Cocchi Vermouth de Torino
3 cl Vi.ER Jól
3 cl Lucano Anniversario Amaro
2 dashes Bitter Truth Wood Bitters
1 dash orange bitters
Stir with ice and serve over cubed ice in a rock glass. Garnish with a small orange twist.
This is an aquavit negroni with spice and character. With the aged amaro it’s a little less bitter than your classic negroni. There’s definitely a lot of Christmas in the Vi.ER Jól aquavit which is enhanced in the mix with a sweet vermouth. The new “Wood Bitters” from Bitter Truth is pretty amazing and brings depth to the drink.
