Champagne, sex and the city…

100 years before Christ the Romans began each year by making promises to the god Janus, the god of beginnings and the guardian of entrances, for whom the month of January is named.

Chpagne cocktial from Kester Thomas - one of the best cocktail bars in CopenhagenJanus was depicted with two faces, one on the front of his head and on the back. Thus he could look backwards and forwards at the same time. At midnight on December 31, the Romans imagined Janus looking back at the old year and forward to the new.

This champagne cocktail  from Kester Thomas gives a nod back to one of the most popular modern cocktails – the cosmopolitan – and brings it into 2018 with a fizzy twist provided by French champagne.

30ml Dry Curaçao
45ml Cranberry juice
Champagne

Stir in the mixing glass and top with champagne and garnish with lime zest.

This is a true new year’s cosmo and a delightful way to enjoy champagne on New Year’s eve!

I believe that true mastery eventually leads to original creation given the right conditions. I love creative cocktails that push the limits of flavor pairing. But I can't deny I have a personal preference for whisky and love everything that is clear and stirred.
