Salon 39 Clover Club

Salon 39 is Copenhagen’s “bar of roses”. As long as it’s been around red roses have decorated the tables and different variants of Four Roses bourbon have always plentiful among the wide bourbon selection on the back bar.

These days the menu is focused on classic cocktails. The best seller at the moment is the Clover Club. On Friday nights it spreads like wildfire throughout the bar as everyone wants “the pink drink with the rose on top”.

The Clover Club Cocktail is a classic that pre-dates Prohibition in the United States. It’s named after the Philadelphia men’s club of the same name, which met in the Bellevue-Stratford hotel. These days it can be enjoyed in Copenhagen with the saloon’s signature twist:

50 ml Geranium gin
20 ml Lillet Blanc
15 ml raspberry syrup
20 ml lemon juice
10 ml egg white

Dry shake to emulsify the egg white and shake with ice. Serve in a cocktail glass anf Garnish with a rose petal.

The Clover Club is a tart drink with a distinct raspberry profile. The egg white provides body and texture as well as a foamy head. When made well it’s really simple and really good.

It’s often served slightly sweet. At Salon 39 they substitue Lillet Blanc for some of the syrup to add complexity and cut back on the sweetness.

This is an all time classic cocktails springled with a little extra rosy elegance.
