Strawberries with cream

Reclaim your sunday mornings with this Danish classic

The most classic Danish summer dessert of all time must be “Jordbær med fløde” (strawberries with cream). With juicy, ripe strawberries at hand you don’t need to add much to enjoy a sublime taste experience.

The cocktail was conceived when Thomas Rode, previous head chef at the michelin starred restaurant Kong Hans Kælder and pioneer of the palæo movement in Denmark, expressed to K-bar owner Kirsten Holm his bewilderment that no one had interpreted this iconic Danish Dessert behind the bar.

Kirsten not shying away from a good challenge took it upon herself to show Thomas how this might be done and created a cocktail inspired by the dessert that she named “Jordbær med Rode” (strawberries with Rode). This cocktail soon became so popular among the guests that Kirsten decided to take it off the menu again as it was never ment to be the only cocktail served! Instead she made a simple, alcohol free version of it that worked just as well, but was also ordered in more moderate numbers:

Strawberry puré
Lightly whipped cream with fresh vanilla
Basil sprig

Shake the strawberry puré with ice and strain into a coupe glass. Top with the vanilla whipped cream and garnish with a sprig of basil.

Strawberries with cream is the epitome of Danish summer. If you have the courage to challenge the cultural expectation of having to drink alchohol at a bar, this red little summer beauty offers you the opportunity to enjoy an absolutely wonderful cocktail without having to sacrifice your wits and the morning after.

If you find it hard to enjoy cocktails without alcohol, you can make this cocktail as it was originally made: Add 2 cl French strawberry liqueur and 4 cl of vodka and you’ll be good to go!
