Grapefruit Vanilla Float

A scoop of ice cream please

Balderdash is probably the only cocktail bar in the city serving ice cream cocktails – both with and without alcohol. They first did it during an event at the 2016 Copenhagen Cooking and Food Festival and, to the surprise of no one, it turned out to be a crowd pleaser.

In the creative process Balderdash owner Geoffrey Canilao did some research on ice cream and soda bars in the states:

“During prohibition in the US a lot of bartenders moved to either Cuba or London. The ones who stayed and honored prohibition started working in soda and ice cream bars. That’s why the US has such a rich history on Sundays, Banana Flips and Floats.” – Geffrey Canilao

Three Cents Pink Grapefruit soda
Acid Phosphate

A high ball glass is filled with pink grapefruit soda and a bit of acid phosphate. A scoop of vanilla ice cream is floated on top and the whole thing is garnished with “tutti frutti” sprinkles and a lollipop.

This is so simple it’s not even funny, but it works so why ruin it with complexity?

The sweet vanilla ice cream goes amazingly well with the tart and slightly bitter grapefruit soda. It should be mandatory to try one.

Geoffrey is planning to start his own ice cream production, and we can’t wait to see what funky stuff might be popping up on the menu when that happens.
