Memories of Aalborg

A few odd components and a sidecar snack

When Paul Graham, bar manager at Brønnum, creates a cocktail, it very often starts with a passionate idea to combine two ingredients. In this case, it was sherry and cucumber! The idea for “Memories of Aalborg” started taking shape when Paul tried a combination of sherry and hazelnuts at a sherry tasting in London, and the wish to serve a cocktail with an edible garnish took shape.  

3cl Jubilæums Akvavit
3cl Fino Sherry
2cl cucumber juice
2cl lime juice
1.5cl spiced simple syrup
3cl (approx.) soda
2cl egg white

Dry shake and shake all ingredients excluding the club soda. Serve in a high-ball glass with cubed ice. Top with club soda.

Garnish with cucumber shaving and serve soy smoked hazelnuts and hard danish cheese on the side

At the first sip, this cocktail will remind you of a nice summer day. The vanilla notes of the Jubilæums akvavit blends nicely with the nutty crispness of the sherry which bridges to the fresh cucumber juice! But try the smoked hazelnut and cheese on the side with the cocktail, you are brought right back into the season of winter. It’s a combination that will leave you wanting more.
