A tiki classic fit for a Frenchman

You might not have guessed a tiki classic to be the best selling drink in a French style cocktail bar. But the “Mile High Mai Tai” has been the best seller on the menu since Helium opened.  It takes Ron Zacapa rum which literally has been aged above the clouds to make Helium’s ”mile high” version of the classic Mai Tai which is fit even for a Frenchman.

Mile High Mai Tai from Helium40ml Ron Zacapa Solera 23
20ml Suze Aperitif
30ml Orgeat syrup
30ml Fresh Lime Juice
2 Dash Angostura
2 Dash House Orange Bitters
Float of overproof rum

Shake all ingredients except the overproof rum with ice for 8-10 seconds. Strain over ice in a tumbler glass and garnish with an orange wedge and a buquet of mint which you slap against the edge of the glass to release as much aroma in and around the glass as possible. Lastly float the overproof rum on top of the drink.

This is a lovely Mai Tai. The extra spice added with the Swizz aperitif liqueur Suze makes it a match for the literal meaning of the drink’s name: Out of this world.
