Lovechild of Manhattan and rum
When Andreas Nilsson got tasked with creating a cocktail for a rum calendar by the Venezuelian rum brand Diplomatico, his thoughts immediately headed towards a Manhattan twist.
In under thirty minutes, The Clipper was born and to this day remains on the menu at Strøm as an often requested crowd-pleaser.
It is easy to understand why, your taste buds fall in love at first sip.
50ml Diplomatico Reserva Exclusiva rum
15ml Grapefruit Cordial*
10ml Cocchi Americano vermouth
2 dashes of Angostura Bitters
Add ingredients into a mixing glass and stir thoroughly. It is important to cool down and dilute the drink slightly more than a classic Manhattan. Pour into a coupe and garnish with a grapefruit zest.
*Muddle the zest of 2 grapefruits and 2 lemons in 250g of white granulated sugar and let sit for a couple hours. Juice the peeled fruit into the sugar mix and stir to melt while adding equal parts water. Finestrain through a teabag or linen cloth, adjust the acidity with citric acid to taste. Compared to a syrup, cordial contains more water to make it thinner but still heavy in flavour.
The Clipper starts flirting with your nostrils. The refreshing grapefruit smell rolls out a red carpet for the explosion of sweet spices from the rum.
The delicious fiery sensation is further fueled by the aromatic bitters, while the grapefruit that started it all gently reappears in the aftertaste and counters the sweetness of the rum with its acidity.
The choice of a slightly sweet vermouth in the form of Cocchi Americano brings all the ingredients together in a smooth drink that will be gone in three or four sips – just as the bartender recommends.
Coming up with a rum twist for a Manhattan is not the easiest of tasks but The Clipper proves that with enough courage and a hint of serendipity, everything is possible.
The cocktail is still being served at the Diplomatico Headquarters for their own Friday bar but we, regular Copenhagen based mortals, enjoy it at Strøm Bar.
