He made the foam his bitch!

Do you enjoy that fizzy feeling of a gin fizz and the texture of a classic sour? Then this signature cocktail from Bar 25 by Ted Dako is right up your alley! Inspired by the classic Ramos Gin Fizz it blends soda, egg white, sugar citrus and a spirit.

Working with a classic as a backbone template doesn’t necessarily make it an easy task. Ted  wanted to take this “fizz” to the next level by mastering the foam in the cocktail having it rise above the glass. After a 100 iterations he made it work, and the first comment from his bar manager was “Darn man, you made that foam your bitch!”.

5 cl vodka
3 cl lemon juice
3 cl full cream
2, 5 cl passion fruit juice
2 cl egg white
1,5 simple syrup
1,5 vanilla syrup

Shake all ingredients and strain into a rocks glass along with ginger ale. Wait for the foam to sit and add the 5 cl of vodka, which makes the foam rise. Garnish with a passion fruit. Serve with a straw and a spoon to eat the foam before drinking. Stir it around with the straw before you drink to mix the vodka in properly.

This cocktail takes a long time to make, but it’s absolutely worth the time spend.Tour de Fizz 3
